🛒 Ingredients (Serves 4)
1 Tbsp unrefined coconut oil or ghee
1 small yellow onion, chopped
1 lb carrots, peeled and chopped
1-inch piece fresh ginger, grated
1/2 tsp ground turmeric (or 1 inch fresh, grated)
4 cups grass-fed chicken or beef bone broth
1/2 cup full-fat coconut milk (optional)
1 tsp sea salt (or to taste)
Ground black pepper & lemon juice (to finish)
Optional toppings: microgreens, hemp seeds, olive oil
🍲 Instructions
Sauté onion in coconut oil or ghee until soft.
Add carrots, ginger, and turmeric. Stir for 2–3 minutes.
Pour in bone broth, bring to a boil, then simmer for 20 mins.
Blend until smooth.
Stir in coconut milk (optional). Season to taste.
Serve warm with toppings of choice.
