Farmers Market Carrot-Ginger Soup with Turmeric & Bone Broth

🛒 Ingredients (Serves 4)

  • 1 Tbsp unrefined coconut oil or ghee

  • 1 small yellow onion, chopped

  • 1 lb carrots, peeled and chopped

  • 1-inch piece fresh ginger, grated

  • 1/2 tsp ground turmeric (or 1 inch fresh, grated)

  • 4 cups grass-fed chicken or beef bone broth

  • 1/2 cup full-fat coconut milk (optional)

  • 1 tsp sea salt (or to taste)

  • Ground black pepper & lemon juice (to finish)

  • Optional toppings: microgreens, hemp seeds, olive oil

🍲 Instructions

  1. Sauté onion in coconut oil or ghee until soft.

  2. Add carrots, ginger, and turmeric. Stir for 2–3 minutes.

  3. Pour in bone broth, bring to a boil, then simmer for 20 mins.

  4. Blend until smooth.

  5. Stir in coconut milk (optional). Season to taste.

  6. Serve warm with toppings of choice.
